New Flavours by the Sea: Discover the New Menu at Jardín de Madreselva

Since opening Jardín de Madreselva, our aim has been to offer something different in Los Caños de Meca. This season, we have introduced new dishes to a menu that continues to evolve, inspired by the flavours of Andalusia, the Mediterranean and the Middle East.

Just a few steps from the beach, we have created a space where vegetarian options, fresh fish, meat dishes and light, seasonal recipes come together, perfect for any time of day. A style of cooking inspired by the experience of El Jardín del Califa, yet adapted to the setting, pace and unique character of Los Caños.

New additions for the season

The new menu features dishes that perfectly suit the atmosphere and lifestyle of Los Caños de Meca: fresh recipes, seasonal ingredients and flavours that evoke a journey across the many shores of the Mediterranean.

Among the highlights is our melon, mint and Grazalema goat’s cheese salad, combining local produce and freshness in a dish that is ideal for the warmer months.

We have also introduced the Dr Feelgood Salad, a colourful and flavour-packed combination of beetroot, sweet potato, pumpkin, red onion, red pepper, pine nuts and a delicate touch of honey. Fresh and well balanced, it is rich in vitamins and minerals, making it the perfect way to begin a meal with plenty of energy.

Long-standing favourites remain at the heart of the menu, including our traditional hummus, smoked aubergine babaganoush, chickpea and parsley falafel, and grilled halloumi cheese served with caramelised figs.

These dishes reflect a style of cooking that has accompanied us for many years and draws on the Mediterranean and Middle Eastern influences that form an essential part of the Califa culinary identity.

Bowls, skillets and sharing dishes

Alongside the new additions, the menu continues to feature some of the dishes that best complement the relaxed spirit of Los Caños. Our bowls remain a perfect choice for those looking for a complete, fresh and balanced meal, while our skillets, ideal for sharing, bring a laid-back and sociable touch to the table.

It is a selection designed to suit different moments of the day and different ways of enjoying food, always centred on quality ingredients and uncomplicated flavours.

The essence of our most well-travelled cuisine

Among the new dishes are some of the most representative recipes from North African and Middle Eastern cooking. The chicken tagine with caramelised orange, fennel and star anise offers a perfect balance of sweet and aromatic spices, while the classic chicken and almond pastela and the fish pastela revive one of the most iconic recipes of traditional cuisine.

Joining them is our almadraba tuna couscous, served with pumpkin, chickpeas and its accompanying sauce. It is a dish that brings together the flavours of North Africa and one of the most prized products of the Cádiz coast.
